A little improvisation for tonight.
Ingredients
Penne (Best if Garofalo)
Asparagus
Champignons
Mascarpone
Pelati
Onions
Garlic
Anchovies
Olive Oil
Parmiggiano Reggiano
Put to cook the Pasta in the boiling water.
Add some olive oil in a frying pan. Add first chopped onions and when golden the pressed garlic clove.
Now you can add some Anchovies (I prefer them to salt, but if you do not like, you can just season).
Add the Asparagus cut in small cylinders and a couple of minutes later the tips.
Add the mushrooms cut in slices or quarters and let cook till they are getting golden.
Add the Pelati and season.
1 minute before the end add 1 spoon of Mascarpone and mix well.
Serve with Parmiggiano.
