Tonight we do BBQ. I do prepare everything and my better half does the hard work.
We like nice good quality meat with a good selection of vegetables.
For today asparagus, eggplants, champignons, beef filet, chicken leg and onion.
Let’s talk about onions. They are great on the Barbecue, they almost get sweet. Ideally you take red Tropea onions.
Unluckily I only have normal white onions, but I don’t give up!
4 spoons good olive oil
2 spoon vinegar, I used white wine vinegar
Boil the peeled onions (the whole) for 10-15 minutes in hot water. In the meanwhile chopped the chill.
Mix all the ingredients with the chill with a brush.
You should get a nice emulsion.
take the cooked onions and according the size insert 2 or 3 toothpicks fron side to side and then cut the onion in 2-3 slices.
Marinate for 30 min with the emulsion and then grill.
