Spring Bruschetta

This is a variation from the 3 tomatoes salad I prepared the other day. Basically you have almost the same ingredients, but different tastes.

I prepared it as a Bruschetta, but you can use it as a pasta sauce or a side dish with grilled fish or meat and it is super easy to do.

Ingredients:

Green asparagus, I choose the wild ones which are thinner

Different kind of tomatoes, cherry, datterini and merinda today

garlic

capers

good olive oil

fresh oregano

fleur de sel

pepper

 

First of all i grill the asparagus with some olive oil and some salt in a griddle skillet.

If you can use your barbecue even better.

Preheat the oven at 200 degrees.

Take an oven tin and place the tomatoes cut at roughly the same sizes. I left the cherry as a whole, halfed the datterini and made slices of the merinda.

Make sure they are nicely spread out.

Put capers, fresh oregano and the garlic cut in thin slices. Now cut the asparagus in bite size and spread them as well.

Add some nice olive oil and season with salt and pepper.

Put in the oven for 10 minutes and you are ready to serve.

I served it with a nice crunchy ciabatta. Enjoy!
