Last summer I planted some Pak Choi in my raised beds and guess what, it’s still growing now over the winter (ok, it’s a very warm winter…).
So I am always looking for new ways to prepare it and this is a delicious one.
Ingredients:
500 gr Pak Choi
Salt
3 tbsp dashi stock (even the instant version works well)
3 tbsp soy sauce
Bonito flakes (katsuo-boshi).
Prepare some ice water in a bowl.
In a pot bring salted water to boil. Quickly cook the pak choi and plunge it into the ice water afterwards. This will help to mantain the nice green and avoid overcooking.
Squeeze out the excess water and cut in bite size (4 cm).
Arrange in a nice bowl.
Combine dashi and soy sauce and pour over the vegetables.
Add some Katsuo Boshi on top and enjoy!
