Tatsuta Fried Chicken

Most people know Tori Karaage, the fried chicken. Wakadori no Tatsuta-age is a similar version but the chicken is marinated before frying it, so it’s even tastier.

Ingredients:

500gr deboned chicken thighs

1.5 tsp salt

3 tbsp sake

for the breading soy sauce and potato starch.

 

Cut the chicken in chunks and put them in a Zip Lock bag together with the salt and the sake. Close it and massage well the meat so that it gets all the flavours.

Now put the chicken first in soy sauce and then in the potato starch until they are nice coated.

Deep fry in hot oil and let them rest on a tray where it can loose the excess oil (kitchen paper is helpful).

Serve with a lemon wedge.
