Got a nice Cooking Machine as anticipated Christmas gift, so I thought of using it a bit…
Ingredients:
250 gr Butter
125 gr Sugar
2 tbsp Vanilla Sugar
1 pinch of salt
1 egg white
350 gr of white flour
200gr redcurrant jelly
icing sugar
Mix the butter till soft with the mixer/cooking machine).
Add sugar, salt, vanilla sugar and the egg white slightly beaten. When you have a nice light mix, slowly add the flour and keep mixing until you have a nice dough.
Wrap it in transparent foil and put it for 30 min in the fridge.
Roll out the dough till its 2-3 millimiters thick with some flour. Use your biscuit forms and prepare the biscuits. You normally have a 2 piece form, 1 for the basis and 1 for the top. If the dough gets sticky put it in the fridge for a while again.
Put the biscuits in preheated oven at 200°C for 8 minutes.
Let cool down. On the basis biscuits put a little bit of redcurrant jelly and put the top biscuits afterwards.
Dust with icing sugar and you are ready to taste!
