Swordfish Sicilian style

During the #stayathome Coronavirus I am cooking a lot. Using old recipes and trying some new. This was a fantastic preparation for the swordfish. Planning to try it again with Tuna steaks.

Ingredients for 2 people:

2 swordfish steaks

8 olives

1 tin anchovies

1 peperoncino

2 tbsp capers

2 tropea onions (if not available red onions)

250gr datterini tomatoes (I used a mixed basket of small tomatoes/datterini)

1 bunch of parsley

Olive Oil

Salt

Pepper

Chop the capers, the olives, the peperoncino and the parsley.

Slice thinly the onions and half the tomatoes. With all the ingredients ready, put a skillet on high heat with some olive oil. Now you can add the anchovies, the capers and the peperoncini.

Mix until the anchovies have melted. Now add the onions and lower the heat.

When they start to soften add all the tomatoes and the parsley. Continue to simmer al low-medium fire with a lid for 15-20 minutes.

Season the swordfish steak with salt and pepper and put the in skillet. Make sure to cover them with the tomato mix. After 6 minutes turn and cook the other side for another 6 minutes.

You are ready to serve. Enjoy!
