Ingredients for 2:
1 pomelo-peeled and in chuncks
3 tbsp chopped and fried shallot
2 tbsp chopped and fried garlic
3 tbsp roasted coconut flakes
4 tbsp unsalted peanuts
2 tbsp palm sugar
2 tbsp lime juice
2 tbsp tamarind concentrate
1 tbsp fish sauce
2 thai chillies chopped finely
2 tbsp fresh chopped coriander
In a small bowl mix the lime juice, the sugar, the tamarind concentrate, the fish sauce and the chillies. In a big bowl put the pomelo, the coconut flakes, the peanuts, fried shallot, fried garlic and the coriander. Mix well. Add the mix from the small bowl and you are ready.
