So I have been busy growing a lot of chilies this spring.
Now with the harvest that started, I am trying a lot of sauce combinations.
Here the first one, Pineapple Mango Chili Sauce
Ingredients:
Chilies, I used a Chinense with a spicyness around 7-8, 12 pieces
1 big ripe Pineapple, chopped
2 mangoes, chopped
12 small spicy chillies
1 teaspoon oil
2.5 dl water
125 ml white vinegar
1 teaspoon sugar
1 teaspoon pimienton de la vera (gives a smokey touch)
1 teaspoon salt
2 tbsp of cilantro (optional)
Heat a large pan and add the oil.
Now you can add the fruits and the peppers.
Cook for around 10 minutes at medium heat.
Now add add the remaining of the ingredients and let cook for about 30 minutes on a slightly lower temperature.
Let it cool down and put it in a mixed until you get the desired consistency.
Pour in pots or bottles, enjoy it with chicken, fish or grilled cheese!
