Shakshuka is an Israeli / Middle Eastern tomato based dish.
Ingredients for 2:
750 gr of ripe tomatoes
2/3 spoon olive oil
3 garlic cloves finely chopped or pressed
1 medium sized onion finely chopped
4-5 medium sized green peperoncini cut in rings
2 tbsp tomato paste
1 tsp piri piri chili flakes (optional)
1 tsp sweet paprika
1 tsp cumin in powder
pinch of sugar
salt and pepper
4 eggs
some freshly chopped parsley as garnish
Heat the olive oil in a skillet and add the onions until soft and golden.
Add the garlic and the peperoncini and let simmer for 5-7 minutes.
Now add tomatoes cut in slices and the tomato paste. When all nicely mixed add all the seasoning and spices. Salt and pepper to taste.
Let simmer for a while, until the tomatoes are soft and the liquids reduced.
Now you can crack the eggs open one by one and put spread in the pan over the the tomato mix.
Let cook for one minute and start to mix the egg white with a fork making sure not to break the yolks.
Continue cooking until the white is cooked and the egg yolk to your taste. I like it runny!
When ready garnish with the parsley and serve with some nice bread.
