Japanese style Potato Salad

A nice recipe for a summer evening. Basically you can change the ingredients according your taste.


waxy potatoes (you can choose the kind you like, just make sure they keep some firmness)


small cucumbers

1 small tin of corn

ham (I used turkey ham)

2 hardboiled eggs

Fresh Herbs

1 cup of japanese mayonnaise

1 spoon of rice vinegar

1 spoon of spicy japanese mustard

salt and pepper

Peel and cut the potatoes in cubes. With the peeled carrots cooked the in boiling salted water till soft (around 15-20 minutes).

Let them cool down.

In the meantime prepare the dressing mixing all the ingredients.

Cut the all the remaining ingredients in cubes and smash lightly the potatoes.
Mix everything and you are ready to go!
