Cold weather, so it is time for a noodle soup again, but I was in an experimenting mood. I mixed up a lot of different stuff…
But first of all, here the recipe for the Soba Noodle soup
Ingredients for 2:
for the Kaeshi:
1/2 cup soy sauce
1/4 cup mirin
1,5 tbsp sugar
for the soup:
3 cups of dashi (granulated dashi works perfectly fine
2 servings of soba (in this case I used green tea soba)
2 tbsp of mirin
chopped asian spring onion (negi)
Put all the Kaeshi ingredients in a pot and bring it to boil and then let it cool down (you can prepare in advance/more and keep it in the fridge).
Cooked the soba in plenty of water according instructions.
Put the Kaeshi, the dashi, the mirin in a pot and bring it to boil. You can now serve with the noodles and the chopped negi with your favourite topping.
A little unconventional, I served it with some Chicken Teriyaki, some Pak Choi (add it while the soup base is still on the fire) and some tempura (shiso leaves, eggplant and daikon).
