Apple and mascarpone cake

This was a new try as a I had a package of mascarpone left in the fridge. Wow, what a surprise!


4 eggs

250gr Flour

400gr Apples (Golden Delicious)

250gr Mascarpone

150gr Sugar

1 packet of Baking Powder

1 Vanilla Bean

1 pinch of salt.

First of all i prepare the apple, I grate them.

Switch on the oven at 180°C traditional heating (static).

Prepare a baking form of roughly 28 cm diameter (butter or baking paper).

In the blender mix the eggs, the salt and the sugar until creamy.

Add the Mascarpone and keep blending until you have an homogenous cream.

Now add the flour with the baking powder and the vanilla (cut in half the beam and scrape out the vanilla with a spoon).

Mix all delicately. Add the apples and mix again before putting it in your baking form.

Put in the oven for roughly 1 hour. Check from time to time, if the top gets too dark, cover with an aluminium foil.

You can test if it is ready with a toothpick.

Cool down before serving.

The cake remains moist for several days thanks to the apples.
