Spaghetti tomato eggplants and mushrooms

Another Pasta variation.

Ingredients for 2:

2 garlic cloves

4 anchovies

chopped chllies (i used 3 without seeds)

1 small eggplant

100gr champignons

olive oil

basic tomato sauce or passata di pomodoro (tomato puree)

a little bit of cream

Spaghetti Garofalo (half a package)

 

In a first big pan add salted water and when boiling add the spaghetti (normally for 11 minutes).

Put the oil in a second pan, when hot golden the pressed garlic cloves with the chillies and the anchovies.

Add the eggplant and the champignons in small cubes. When the start to take a nice golden colour take them out of the pan and put them aside. Add the tomato sauce / passata season at your pleasure (pepper, oregano, …) and let cook some minutes.

Then add a little bit of cream and when the colour is uniform again add the vegetables again.

By now your spaghetti should be cooked, add them in the sauce. Serve with Parmiggiano or Grana Padano. Enjoy!
