Apricot Habanero Jam

We had a very hot summer and somehow the whole month of September my chilli plants were producing a lot of fruits.

I got quite creative in order to use them ;-).

This is a spicy Jam that I did to serve with a nice cheese platter.

Ingredients:

12 Habanero (mine were a bit smaller)

750gr of frozen halved apricots

325 gr of sugar with gelling agent (we can buy this mix here to make jams)

2 tbsp of grated ginger

8 tbsp of lime juice

 

Defreeze the apricots and clean the habanero from seeds and placenta.

Put the chillies, the apricots, the ginger and the lime juice in a blender until you have a nice creamy consistency.

Heat a pot and the mix and the gelling sugar mix and let cook for some minutes. The instructions on the gelling sugar only require 3 minutes, I left it cook for about 20 minutes.

Ready to put in sterilized jars and cool down.
