Ravioli with Gorgonzola Spinach and Ricotta filling

Wanted to do some home made raviolis.

I use the same recipe for the pasta as I used some time ago. home made pasta.

In a pan I put some live oil, some butter, chopped onions and some garlic.

Add the spinach and cook for about 5 minutes until soft. 

Put the spinach in a mixer to blend. Add some fresh ricotta, some gorgonzola (i used the strong one). 

In the meanwhile prepare the pasta in the “nonna papera” until you get some thin sheets of pasta.

Add little balls of filling well spaced out on the sheet and cover with another one. Get out air bubbles and use a special ravioli cutter. Put the on a dish with flour on it to get the excessive moisture. Do not put them in multiple layers or the will stick together. 

To cook them just drop them in boiling salted water for a couple of minutes. Serve with any sauce you like. Enjoy!
