Home made Pasta – Tagliatelle and tagliolini

I did not do fresh pasta for a while and tonight I got a special request.

Ingredients:

300 gr. wheat flour

100 gr.  durum wheat

4 eggs

half a teaspoon salt

 

Mix the two flour and the salt.

Add the eggs and mix with a fork to start. Then use your hands to knead the though until even and smooth. If needed you can add a little bit of water.

Let rest at least 30 minutes. Knead again and cut into 4 pieces.

Use the Pasta Machine (Nonna Papera in italian) and start with level 1. Let the 4 dough through.

Add some flour after the machine. Put down to level 2 and repeat. Always make sure to put enough flour on the pasta sheets. Continue till level 7 and then let it through the tagliatelle cutter or roll the pasta sheets and cut with a knife. Put them on a clean dishcloth with enough flour. Let dry a bit before cooking. They need only 2-3 minutes in boiling water. Enjoy!
