Roasted Chicken and potatoes

From time to time we just buy a nice chicken and roast it.

It’s so simple and you just need some patience while it’s in the oven.

You can use any spices or rub at your taste.

Ingredients:

1 Chicken (I really make sure it is a Swiss Chicken of good quality)

Rub, in this case I took Piri Piri a spicy Portuguese mix

Olive oil

1 Ziplock bag (big size 3L)

for the potatoes, some nice new small potatoes

Olive Oil

Seasalt or seasoning mix

Rosmarin branches

1 Ziplock bag (medium size 1L)

 

Wash the chicken and pat it dry with kitchen paper.

Put it in the Ziplock bag and add the spices and the olive oil.

Close it well and massage the chicken until it is evenly seasoned.

 

Wash and cut the potatoes in quarters.

Add them in the ziplock bag with the oil, rosmarin and the sea salt or seasoning.

Close it well and massage as well.

 

Take a roaster with a rack in it. I put the potatoes below and the chicken on top.

Now you are ready to put it in the oven.

In this case I had a 1.346 kg chicken so with 200°C in the air circulating Grill function it cooked for 1h 10 min. At mid time I turn the chicken.

If you are using an oven without air circulating function you should enter a 10-20 °C higher temperature.

After cooking let the chicken rest some 10 minutes before serving.
