I got inspired again by one of those nice Hokkaido pumpkin in a beautiful orange. This time I gonna make a soup
Ingredients:
1 Hokkaido pumpkin
1 red onion
700 gr chicken or vegetable stock
Olive oil
200 ml cream
salt and pepper
Peel the pumpkin, take out the seeds and cut the pumpkin in cubes.
Put some olive oil in a pan at medium heat and cook the chopped onion until soft (roughly 5 min).
Add the pumpkin and cook for 10 minutes stirring from time to time.
Add the stock, season, bring it to boil and then let simmer for 10 minutes.
Add the cream bring it boiling temperature and then use a hand blender till creamy,
You can serve with some pumpkin oil or, like we did, Balsamico Vinegar. Enjoy!
