Chimichurri is a south american sauce prepared with fresh herbs that matches well with grilled meats.
There are many different ways of preparing it and best would be to chop all the ingredient by hand.
But I don’t mind using the food processor for a quick preparation (when the meat is on the BBQ already.
This time I used Coriander (Cilantro) but the most common version is with parsley (very nice as well).
Ingredients for 2:
A small bunch of Coriander
3 garlic cloves
2 chilies
1 spring onion
2 spoons of fresh oregano leaves
half a lime juice
2 spoons of vinegar (at your pleasure)
salt and pepper
1 cup of olive oil
Put all the ingredients in the food processor and mixed until you get a nice emulsion.
