Pumpkin flowers filled with Mozzarella, Tuna and anchovies

One of my favourites!

10 pumpkin flowers

1 mozzarella di bufala

80gr of canned tuna

5 anchovies

5 capers

some breadcrumbs

some parmesan

 

Start the oven at 180 C.

Wash and dry the flowers. Carefully remove the pistil.

Put in the mixer the mozzarella in pieces, the anchovies, the capers, the tuna, peppers and some oregano.

Mix till you have a nice cream.

Fill the flowers with a couple of teaspoon of the mix and carefully close them and put the on a baking tin.

When you have prepared all of them, sprinkle some olive oil on the top, some bread crumbs and some grated parmesan.

Put in the oven for 15 minutes.

Enjoy!
